Chef Giovanni Bavuso

Born in 1986 and originally from Basilicata, Giovanni discovered his passion for cooking as a child, inspired by the authentic flavors and aromas of his region’s culinary traditions. After completing his studies, he embarked on a career in fine dining both in Italy and abroad, honing his technique and creativity.

In 2022, Giovanni joined Hotel La Palma as Executive Chef, leading the kitchen brigade with vision, experience, and a creative spirit. His cuisine celebrates local ingredients and traditions, with a special focus on so-called “humble products,” reinterpreted through modern techniques and a sustainable approach. A signature example is his innovative take on alice in tortiera: anchovies marinated in ponzu sauce, eggplant in two textures — scapece-style and smoked cream — crispy crusco pepper, and an essence extracted from the bones. A dish that perfectly embodies his circular philosophy, blending memory and innovation.
